Method
After we had the design we chose 3 sail types to make: Bermudan, Gaff & Gunter.
We then set up a long contaner of water and a fan and timed how long it took the boat to get to the other side.
Our results are shown below.

From this we can see that a Bermudan rig is faster than a Gaff or Gunter rigged boat (at least from our testing).
